Steps for The Beef: |

In a fry pan, brown the beef |
 |
Drain Fat |
 |
Move to a large pot |
|
Steps for The Onion and Pepper: |
 |
Dice the onion and the pepper
|
 |
Lightly sauté the onion and pepper
|
 |
Add to the large pot with the beef |
|
Add the following ingredients to the large pot: |
 |
1 large can of tomatoes |
 |
8oz can of tomato paste |
 |
2 teaspoons of chili powder |
 |
1/8 tsp. of red (cayenne) pepper |
 |
1 tsp salt |
 |
1/2 tsp paprika |

Stir the ingredients and simmer the large pot for 2 hours, stirring occasionally |

Before Serving: |
 |
Rinse the kidney beans in cold water |
 |
Rinse the corn in cold water (optional) |
 |
Add to the large pot & Stir to mix ingredients |
 |
Wait until the beans and corn are warm |

Serving: |
 |
Using a ladle or large spoon, serve the chili in bowls. Top each bowl with shredded cheddar cheese, a dollop of sour cream, and some sliced scallions and serve tortilla chips on the side. Delicious! |
