Matzo Ball Soup
This traditional, hearty soup is a delicious addition to any Passover feast. For Passover FUN for the whole family, have your children help you make the matzo balls! A great dish for your Passover table. Makes 5 servings.
Steps:
Bring a large pot of lightly salted water to a boil.

Break matzo into small pieces, place in large bowl.

Cover matzo with water; allow to soak for no more than five minutes, just until soft.

Drain excess water.

Melt butter in a large skillet over medium heat.

Add matzo; stir until mixture is dry and slightly brown.

Remove from heat and stir in eggs, salt & pepper, parsley, and onions.

Add matzo meal until mixture holds together.

Roll mixture into balls. (Each about the size of a golf ball.)

Place one matzo ball in boiling water to test. The ball should rise to the top and not break apart. If it does not rise, add another beaten egg to the mixture and try again.

In a large saucepan, bring chicken broth to a boil over medium heat; add balls to broth.

Soup is ready when the matzo balls rise to the top.

You will need the following items for this project:
1 (10 ounce) packages matzo crackers
1/4 cup butter
3 eggs
Salt & pepper to taste
1.5 tbsp chopped fresh parsley
1 onion, finely chopped
2.5 ounces matzo meal
4 cans chicken broth (12oz each)
