Traditional Potato Latkes

Steps: |

Wash, peel, and grate potatoes, put in large bowl. |

Chop onion, add to potatoes in bowl. |
 |
Press out all excess liquid. |
 |
In a separate bowl, lightly beat eggs. Pour eggs into potato/onion mixture. |

Gradually stir in matzo meal. (Batter should be doughy. If it seems overly dry, stop adding matzo meal and add one egg.) |

Add a few pinches of salt and pepper. |
 |
Coat bottom of skillet with layer of vegetable oil, set burner to medium-high. |
 |
Form batter into thin, palm-size patties. Place in skillet to fry. Flip when bottom is golden brown. |

When latke is browned on both sides, place on paper towels to absorb excess oil. |
 |
Continue this process with remaining batter. |
 |
Serve your Traditional Potato Latkes hot, with sour cream or applesauce. |
