Harvest Pumpkin Pie

Making Your Pumpkin Pie Crust |

Preheat oven to 350. |
 |
Combine 2/3 cup all-purpose flour, 1/3 cup whole wheat flour, 3 tbsp wheat germ, tsp salt, and tsp cinnamon. |

Add cup butter and 1/3 cup brown sugar to mixture in processor, process until dough holds together. |
 |
Press crust mixture into bottom and sides of pie plate. |
 |
Freeze 15 minutes. |
 |
Place crust in oven and bake about 20 minutes - until dry and golden brown. |
 |
Transfer to a wire rack; let cool completely. |
 |
Reduce oven temperature to 325. |

Making Your Pumpkin Pie Filling |
 |
Whisk together cup of pumpkin and 3 eggs in a bowl. |
 |
In a separate bowl, combine cup brown sugar, 1 tbsp cornstarch, tsp salt and pinch of each spice. |
 |
Whisk brown sugar mixture into pumpkin mixture. |
 |
Whisk in 1 cups evaporated milk. |
 |
Tap bowl firmly on counter to release air bubbles. |
 |
Let stand 20 minutes. |

Make sure oven is set to 325. |
 |
Place cooled graham crust on a rimmed baking sheet. |
 |
Pour in pie filling, tap on counter to release air bubbles. |
 |
Place in oven and bake 45-55 minutes. |
 |
Remove from oven, place on wire rack to cool completely. |
 |
Serve at room temperature or chilled. |
